Why are all of these people in Hong Kong so upset?  My understanding was that China proposed an extradition bill that has since been rescinded.   So what exactly are all of these people so passionately protesting?

It's all about the autonomy of HK. When HK was integrated back into China they agreed to a two system one state policy. HK would essentially be allowed to remain somewhat autonomous WITHIN China. They could retain things like freedom of speech and freedom of the press while remaining in China. But the recent extradition bill imposes on that to some degree and HK is worried that the mainland will begin to impose increasingly strict oversight on HK. It's more complex than that, but that's the macro view.
